Cherry is brought to a central mill at the offices of ACALEM. A new ECOPULPER (demucilage machine) was provided for by a local NGO and was installed prior to the 17/18 harvest. During the 18/19 harvest the mill was in full operation. It takes an average of 7 hours for coop members to transport their cherry from the farm yo the mill. Dry milling and sorting is done at a neighbouring cooperative.

Don Jose is 75 years old. He has 7 children all full grown adults. 5 men and 2 women with a total of 10 grandchildren. He is second generation coffee farmer and part of a newly formed coopertive in Morazan called ACALEM.

While basically a coffee farmer from birth, Don Jose began working Finca La Victoria just 5 years ago. His trees are in their second year of production having been planted 4 years ago. With the help of the cooperative (ACALEM) and local NGO's , Don Jose strives to integrate climate smart farming practices on his farm and he notes challenges with shade and soil management being particularly labor-some but he know's the work is important not just for the quality of his coffee but for his community.

Conservation work and growing coffee lead to plenty of challanges on the farm. For exmaple , it's both cumbersome and expensive to main proper pruning and have good shade management. We look for better prices in order to provide better pay for our manual labor
